Green beans are actually a good source of beta-carotene and contain very high levels of vitamin k, vitamin c and are very high in fiber! Are you looking for a way to use up your summer crop? Or maybe you found the sweet deal I did this week at the grocery store (.99 cents per lb!). This is my go-to fix that works with most vegetables and always tastes great! This recipe is very simple, healthy and low fat.
Easy Summertime Beans

Prep & Cook in minutes
1 lb fresh green beans
McCormick Perfect Pinch Salad Supreme Seasoning
Fresh cracked pepper (optional)
Sea salt (or table salt, for water)
Extra Virgin Olive Oil
Begin with a 2/3 full pot of water, add about a tsp of salt, bring to a boil. Add in beans, boil until al dente (this is the most important step so you don’t end up with mushy beans, they will be ready very quickly so don’t walk away from the stove). Drain.
Put beans in large bowl. Drizzle olive oil over the beans (enough to lightly coat, you don’t want to end up with a pool of oil in the bottom of the bowl). Sprinkle the McCormick Perfect Pinch Salad Supreme Seasoning over the beans (you don’t need a lot, a few shakes will do the trick). Crack some fresh pepper if you desire (to taste). Now take a large spoon and toss the beans around to evenly distribute your oil and seasoning.

I made the most insanely good wrap last night! This wrap is low fat with lean protein (turkey). I recommend Joseph’s to everyone I know but you could substitute your favorite! Joseph’s are amazing when eaten fresh. They have Omega-3’s and flax. They taste delicious and the texture is amazing. No, I am not getting paid to say that! 😉 You all must try them.
Joseph’s Turkey Roll Up
1 Joseph’s flat wrap (or wrap of your choice but go for rectangular shape)
6-7 grape tomatoes
1 cup spinach
1 slice white onion
Mozzerella cheese (I used a chunk that was about 2×2)
12 slices fresh dry low sodium organic sliced turkey (or turkey of choice but go for dry)
Ken’s Steakhouse Honey Mustard Dressing (or honey mustard of choice)
Turn your oven on 350
Lay out two flat wraps side by side on a baking sheet (I used a crisper sheet with holes)
Lay out your spinach evenly in the center of the two wraps- the long way- straight down
Follow with turkey, onion, tomato, cheese (in that order)
squirt the dressing in a zig zag all the way down
Bake at 350 degrees until the wrap feels warm throughout and starts looking a bit crispy on the edges
I created this recipe last week and it is sure to be a new staple in my diet, delicious!

Calories: Oats alone (150) + toppings
1/4 cup steel cut oats
Milled flax seed (optional)
Cook oats according to package. Scoop out of pan in one scoop, do not stir. Drizzle with agave nectar, sprinkle with dried cranberries, walnuts & flax seed.
